Easy Quick Healthy Meals

Easy Quick Healthy Meals:

When you are a mama on the go like I am, but you reallllly dont like to eat out every night and at the same time barely have any time to cook you have to figure out how to make something that is healthy, quick, and easy,...and of course, delicious.  Here are some of the meals i've made over the past couple weeks that I remember to snap a few pics of.  I try to make 2 completely home made meals a week, we go out 1 night usually on the weekend, and then the other 2-3 nights i'll whip up something quick like this: 





CousCous Stuffed Salmon: I posted this salmon and brown rice recipe a couple weeks ago, instead of broccoli I grilled up some zucchini, i wanted to post it again because the zucchini was so easy, i used an herb spice mix, salt and olive oil and they were so yummy!




Chicken, Pesto, Spinach, Pepperjack Panini: I used 1 tablespoon of Tj's premade pesto sauce (not the jar, the container), olive oil to grill the bread (i used TJ's cracked wheat sour dough bread..my guilty pleasure), a handful of spinach, 1 pepperjack slice, pregrilled chicken (packaged by Tjs.. the upside is its fresh and quick to use but the downside is you have to use it within a couple days or it goes bad), and sliced red bell pepper.. so good!




Veggie Stuffed Peppers with a hodgepodge of what I had in the frige/feezer (i deperately needed to go grocery shopping, this was at the end of last week) Salad, and Meetless meatballs over Brown Rice with teriyaki sauce. Took just 10 minutes.








PASTA NIGHT! I made spaghetti with TJ's organic brown rice spaghetti noodles (this was my first time using the spaghetti noodles, i had only used their penne --which i like better, but they were still good), i grilled up some ground turkey and onion, and then used Tj's ogranic Tomato basil Marinara (much quicker than doing it from scratch).  Then I made some kale salad which i've posted on in the past, its olive oil, lemon, garlic, red crushed pepper, salt and paremsan cheese.. sooo delicious.
I just realized that i used these (spaghetti noodles) when i made pasta on a different night last week.. I used rotini brown rice noodles this week (in the pic below)




Coffee:
 Trader's is pumpkin crazy right now for the Fall season, so we decided to try out their pumpkin spice coffee and i looove it.




Curry Chicken and Veggies over Brown Rice: I buy Tj's premarinated meats sometimes, this was their curry chicken tenders, i grilled them up and used their 3 minute microwavable brown rice (in the frozen section, ive posted on this before as well), and then chopped up some veggies and used their curry sauce to top it off and give it some moisture.

My Baby Boy is 2 Months Old!


I'm a little behind on blogging (he's now almost 3 months), I have many posts in the works that I can't wait to post so I am a bit behind. We were moving the first and second week of September and then the third week I went back to work so it's been crazy around here lately. 

My little one is 2 months old! He turned 2 months the day before our 1 year anniversary so it was an extra special weekend for us! My love for this little soul is immeasurable.. It literally continues to grow every day. I get so lost in love with him ... these are memories I never want to forget: When i press my cheek to his and cuddle him close, when I'm burping him and just smother his cheek in kisses because he smells so delicious, when his hands grab onto my hands, when he's falling asleep next to me (this happens rarely because I'm trying to be disciplined with sleep training) he grabs onto my face with his cute soft little fingers and it absolutely destroys me, I kiss inbetween his nose and his mouth and he smiles SO big, when I'm changing him and see his adorable little tummy, the softness and smell of him, his little jerky movements since he is learning to control his arms and legs, his bobble head, his coos and "almost laughs", how his eyes smile when his mouth smiles, his cheeks get so big while hes asleep because his chin rests on his chest, how he sucks his tiny fists, how he attacks like a shark when hes hungry or wants his pacifier (its the funniest and cutest thing), the sound he makes when i brush my hair across his face (its insanely cute and would melt any humans heart), the way he looks into my eyes and lets me know with the most adorable staire that he knows I'm his mama, how he cracks up when I kiss his feet and hands over and over, how he plays with his toys now & has become mr. curious.. I'm obsessed with this little boy of mine and he has the key to my heart (him and his daddy). 

This little guy has so much personality already. He coo's like crazy, especially in the morning when he first wakes up. He is so smiley and so much fun to hang out with. I haven't met a person who isn't completely smitten with him yet! We feel so blessed that this little angel is ours and couldn't be more thankful each day we wake up to his sweet face and every night that we sing him a lullubaby an kiss him good night. 

He goes to bed every night at 6-630 latest and easily falls asleep on his own (naps are a bit more work as he isn't old enough quite yet to self-soothe). He sleeps his longest stretch from 6:00-11pm (4.5-5 hours usually) and then from then on he wakes up every 3-4 hours (from the start of the feed to the start of the next) and sometimes does another 4 hour stretch in the early morning. He usually wakes up at 7:30am and takes his first nap around 8:15-8:40am. He kicks his legs like crazy and moves his arms everywhere. He bats at things and grab onto my hair and whatever im wearing. He eats every 3 hours and it takes him about 5 minutes and only eats on one side (he must be an efficient eater!).  

We love you little man, you have stolen our hearts and we couldnt be more blessed by you.

2 Months Postpartum & My View On Losing The Baby Weight


2 Months Postpartum (cant wait for that dark pregnancy line to fade away!)

Oh boy I'm a little behind on my posts because I have a few giveaways in the works for you lovely readers. So Needless to say, the above picture is from a few weeks ago and my sweet boy is now 10 1/2 weeks old! They just grow so quickly (ill try my best to finish his 2 months old post as well this week).

This is 8 weeks postpartum after a cardio session, feels so good to sweat again!


I lost 19 pounds of my gained pregnancy weight by 3 weeks postpartum. Since then I haven't lost any more weight. I gained 21 lbs while pregnant so I have 2 lbs to go until I reach "pre-baby weight". I just think "pre-baby weight" is such a silly term because although you might reach the same weight, your body can look & feel completely different than "pre-baby". I think I have a few lbs of body fat to lose & a few lbs of muscle to gain back. Our society has this strange fixation on getting back to "pre-baby weight" ..of course theres weight to lose since you have to gain a healthy amount while pregnant, but the biggest difference is toning up and letting your body adjust from having a huge baby inside of it (not necessarily losing that last bit of weight). For example, your uterus has to go back to its normal size (it goes from the size of a watermelon at 40 weeks pregnant, to the size of a pear while not pregnant) this takes at least 3 months after you've had your baby. I think it's about feeling confidant and great in & out of clothes again. And maybe it's a new confidence as a human that has now birthed another human?!. My point is, weight shouldn't be the goal.. The number on the scale really doesn't mean much & shouldn't define us. I aim to be strong, to be healthy & happy for my husband & son, to be an example & light for my Savior to use, & to feel great inside & out while taking care of my body so I can live a long joyful life with those i love while feeling good and energized. That's MY goal. I've done the whole "I'm hunnnngry and starving and cranky all the time" thing & the "overwork yourself and miss out on life" thing AND the "eat crappy and feel crappy" thing. Its a mess, it makes you feel like a mess, and its no way to live life abundantly the way we are meant to, the way God intended for us to. 

So if you are coming on this journey with me lets look at this from a healthy lens and encourage and lift each other up to be our best selves, love and embrace ourselves, and get to a place were we feel confident, and for lack of a better term,.. g r e a t. 

Making time to work out is tough and requires a bit more planning than when you can just pop into your car and go whenever you want (pre baby).  I have to either plan it perfectly for him to be napping (hes still young enough to do this and take him along in his carseat while i work out really quick), or on nights when my hubby is home early enough for me to go really quick, i will sometimes go but its hard to miss out on time alone with my husband while the baby is sleeping.  I work out probably 4 days a week doing cardio and i've been trying to do weights at least 1 time a week in a class..sometimes i can get in 2 times a week.  

I havent been as focused on getting back in shape (or more toned rather) than i have been on being happy and enjoying these moments with my family & juggling going back to work twice a week & spending quality time alone with my husband. Its tough when you also cook & clean and JUST moved a month ago and still have so much that needs to be done.  I slowly but surely will get to a place where im completely satisfied with my level of fitness and strength, but right now its not on my list of top priorities and i think thats a great thing.

I will work out when I can, stay motivated, and be okay with that.  I feel great right now, I may not look the same as I use to prebaby but I feel so amazing for just having made a life and getting to spend every day with my two boys. I feel healthy.. minus my stinkin sweet tooth (i can thank breastfeeding for that one).  I feel like my body is naturally going back to its shape somewhat, and i didnt have expectations of how long that would take or what the end result will be. Im not on any diet, im actually eating a little less healthy than i use to just because my cravings are really strong for fatty foods and sugar while breastfeeding but im okay with that too. My goal is to not be hard on myself and to ENJOY living in the present with my family.. because why strive so hard and stress myself out when i could be gone tomorrow and lose out on the really important moments with my two favorite people sharing giggles and cuddles.  

I havent noticed that much of a change since a few weeks ago, other than my uterus shrinking day by day (not using a wrap or anything for it just letting my body naturally do what its supposed to).  I think i'll kick up trying to tone up maybe in a few months when we're more in a groove of doing things around here and when we can establish more of a routine as he gets older and my husband and i figure out working and babysitting etc.
